Can I freeze cured unsmoked bacon.

I have some bacon ready to come off the cure on Sat. I'm pressed for time this weekend and would like to defer the smoking for a week. Can I freeze the smoked bacon, thaw it and smoke it 10 days later?

As long as the cure time is done you'll be fine, once in the freezer the cure goes dormant.

I've had some thing come up and had to freeze cured sausage before it was cooked.

Thawed in the fridge and it cooked up just fine.
