Cajun Elk/KC Jerky

Got 2 lbs of ground Elk out to make some Cajun jerky.

The Cajun seasoning is regular store bought that i put in my spice grinder to make it fine.



My wife will be home tomorrow for awhile before work so i'm going to use the KC with jerky nozzle on the counter  :o So if you never hear from me again i am mud  :D


Got the lids on ready for tomorrow.

I am jealous now. Haven't had good elk jerky since I was in the Navy and one of my ship mates was from Colorado and brought some back from one of his yearly hunting trips.

Got the mix ready.

1/2 cup water with the cure dissolved.
1 Tbs vinegar
1 Tbs Trehalose






Got a call saying I have to go to Allentown so I gotta bag the Elk up  :-\ for later

Rick, she can read the forum from wherever she is buddy!  You keep giving yourself away. ;D  Post AFTER you have done it.  Much easier to ask for forgiveness than to ask for permission. ;)

Haven't you been able to get her convinced it was just a faulty hose fitting that let loose and you have it fixed with a good fitting. I have considered coming up with some kind of sausage room. Wouldn't that be nice.  I am getting ready to crank out a batch the week after next but it is with my wife's brother so she is OK with it. It is another story when I make sausage with my hunting friends. They are a little messy and it drives my wife nuts.
