Volunteered to make Beef Stix...

My neighbor has a son in afghanistan and he is getting some goodies ready to send over to him, so I kind of volunteered to make up some beef stix and some jerky...the jerky will be made Tuesday, Pat starts her radiation therapy tomorrow...
 We seem to like Back Woods seasoning, mixed with 5lbs of 80/20 ground beef, and using collagen casings...we gave them 2 hours of hickory smoke and were running late for dinner out with friends, so everyone into the pool, (roast pan electric) IT was 165 and then a ice bath allowed to bloom, spent some time in paper bags, cut and vacuum packed...
 Will be afghanistan bound on Friday...

Thanks Chris...Pat just came in the door a few minutes ago from her radiation therapy and the first thing she did was hit her easy button... :D :D :D thanks everyone...

Looks awesome!  What a nice thing you did for your neighbors son.  I'm sure it will be much appreciated when he gets it.
