It's a Hit...

Well my daughter call Tuesday evening and asked if I would do a pulled pork for work.

I replied sure!

She then said I need it Wednesday morning. WHAT???

Well here we go...



I started with a 8 pound butt, injected with Apple juice, water, sugar, and salt.



Applied a liberal amount of mustard with John Henry's Nedra D's Hickory Rub Seasoning.



Refriged for about 2 hours only then let rest on the counter for about 30 minutes as the smoker heated...
Limited time - Remember!!



Well it's 7:30pm and time to preheated my Bradley smoker to 260f for 30 minutes and then placed the butt on the second shelf from the bottom...



I'm using 6 hours of Hickory and well not open this door for at least 4-5 hours...



Well it's 9:30am and the butt reached 194f...time to foil.

My daughter showed up at 9:35am and helped with the FTC. Off she went with the beauty and at 11:45am she texted me...

It's A Hit!!! Thanks Dad!

Good job Mark, it is always great when you can be a hero to your kids. On one hand you are proud, on the other you wold like to tell them not to wait until the last minute (as if that ever works ;D)

You skated this time (and very smoothly, I might add).  Better train that girl better, though - or ALWAYS KEEP PLENTY OF PULLED PORK IN THE FREEZER FOR EMERGENCY USE!  Oh, sorry, was I too loud? Anyway, unless there's someone on site being impressed by your smoker-tending skills, a few pounds reheated is just as good as fresh and a lot less stress in "I need it almost now" situations.

Beautiful!!!! There is nothing like the admiration from you daughter.  Me, I am like Ka Honu and keep at least two in the freezer, and I may never tell they were previously frozen.

When you pull one of these out of the freezer, how long do you generally reheat it for and at what temp?

Out of the freezer early the morning you want to serve.  I freeze the shoulder wrapped in two layers of foil, so it is ready to put in a covered roaster for one hour at 245*, can be longer if needed with no problem.  I put 1/2" water in the bottom of the roaster at the time of reheat.  There will be some wonderful juices in the pan for serving.  It takes about 4-6 hrs to thaw straight from the freezer at room temp, then it is ready for reheat.  Now I am hungry for some pulled pork. ;D
