would like to try it this Sunday. Can you season the smoker and then smoke meat right away?

I'd like to do ribs with a mix of apple and hickory bisquettes.

Welcome Joe. Season it up good and get to smoking!  Yes you can smoke meat as soon as you get it seasoned up.

welcome to the forum, and yes you  can, season it as soon as possible then start smoking and  cooking,  figure 1 hr to 1 1/2 hr per lb of meat to cook at 215 to 225 box temp and in most cases 180 to 200 Internal Temp of the meat

Yes your family will think your nuts for taking pictures of your food. Don't worry they get over it. Then they start asking if you have taken your pictures so they can eat.

My wife thought I was a little off before we got married, once I got my OBS and started taking pics of our food she's sure of it now.

Keep that vent open at least half way when your smokin/cookin.

Wide open when doin poultry.

Mine is stuck wide open.
