Brisket Fun

Was looking around in the big freezer and found a 9 1/2 select brisket.



I let it thaw in the fridge and was gonna grind it up for a meat loaf. But

instead I gave it a pretty good haircut (trimmed the fat) and ............



.............. decided to use this. Thanks Nepas!



All bagged up ...........



Plopped into a container and back in the fridge for an over nite swim.



I trimmed right at 2 1/2 lbs of fat. (I vac-pak the fat for future sausage)

Since it was a Steak Marinade and it smells kinda salty (smells like Dale's)

might go with just a pepper base seasoning or Black Bama Powder.

We'll see what happens tomorrow.

This was suppose to get started yesterday afternoon, but an emergency

came up and I had to help a friend drown his sorrows. We both survived. ;D

Brisket out of the marinade.





Decided to use:





All seasoned up and in the smoker.



Also had a 5 lb shoulder roast.

Got to try out my new spice grinder.













I put the fat cap down on the brisket and fat cap up on the roast.

Using Mesquite for my wood. Real Mesquite.



The smoke is a rolling!



Told you I didn't have a top vent cover. I lost it.

Looks awesome, can't wait to see the finished product. Forgive my ignorance/newbiness, but how are you using real mesquite?

Actually I was wondering on when someone was gonna ask.

I'm not telling you to try this, but I did.

No smoke generator, just the cold smoke adaptor.



And inside it is ..................



Charcoal and the mesquite.

It did cause the magnet seal on the cold smoke adaptor door to sag a little, but

I had to know what would happen if I tried it.

Here's the meat after about 4 hours.

Good idea with using real wood. One of these days I will get around to building one.  :-[ Just to lazy this summer. Might be a good project for the fall.
