Char Siu Sunday

Every time I go to the Casino to play cards, I always get the War Wanton soup and love it.  I think I like the pork Char Siu the most and so decided to try and make it myself in the Bradley.  Obviously, the first thing I did was to go to Costco to try and find a suitable piece of meat for my experiment. I'm sure this will do just fine :)


The next thing I'm going to need would be some Char Siu seasoning to marinate this small beast in.  I picked up a few of these packets at the local store and decided to give them a whirl.  I also found a recipe on line from scratch.


I wasn't sure if there was going to be enough of the seasoning to take care of the whole behemouth, but we're going to make due.


Going to cut up the two butts into fairly thick steaks to make it easy on myself


Next, I mixed up several of the packages and put the pork into gallon bags to marinate over night. I think the ratio was about a package for every 1 1/2lbs of meat.  I actually marinated for probably 36 hours. ( work got in the way)


After bringing them up to room temperature, I put them into the OBS @ 225* for about 4 hours with 2 hours of maple.  Brought up to about 155* IT.


After pulling them out of the smoker, I cut up a steak to see how it turned out.  VERY Nice.....Most delicious. Wife loved it as well.


Obviously I had TONS of leftovers.  What am I going to do will all of it?  Oh Yea, I got a box the other day! ;)


So, into the food saver it goes to be had another day in another dish :)

Just let me know. I'd be more than happy to send you a package. There is also a Char Siu glaze that is awesome. There's a ton of seasonings that I hear people talk about on this site that I know we can't get out here.  Besides, who doesn't love packages ;D ;D ;D

Great job!  I've picked up a couple of these packets also...just haven't tried yet.  This post is pushing me into trying soon!

I don't think you'll be dissapointed. I made some pork fried rice and some soup out of a slab.

NOH is a Honolulu company so if you know someone on Oahu, be really nice to them.  If you don't, there's a mail order form link on the NOH website product page (here).

Smokin Soon

NOH stuff is is pretty good, easy to find in Cali due to large Asian population. Others may have to search out an Asian Market or buy online. I have tried it on pork roasts, loin roasts and shoulders and think that the shoulder has the best flavor. For a nice kick for bean dishes, mingle in some Tasso seasoning. I make one with black eyed peas and bacon that is off the hook.
Only problem is that most of the Cali folks hate black eyed peas. More for me!

Mike, don't really know why most folks out west don't like black eyed peas. I can do the same dish with boring white beans and they devour it.
