Had to go to plan B - fajitas

Was going to break in my SRG with a chicken and baked potatoes, but the remnants of Lee put a damper on that. while i have a "house" for the Bradley, the SRG is out in the rain. So I postponed that and went to plan B

Got some skirt steak, covered them with chile powder



Put it in the crock pot for a few hours with a little beef broth. After a few hours it came out very moist and tender. Practically shredded itself.



Heated up a tortilla, added the shredded beef, some sour cream and guacamole


Then added some diced tomatoes, and shredded cheese


Rolled it all up, added some fried rice and it all came together

That looks great. I normally put a rub on with some limes and then grill my skirt steaks for about 6-7 minutes. I'm curious if putting it in the crock pot makes much difference because skirt steak just always tastes great. Very underrated cut of meat in my opinion.
