Hi all
I first want to say that I have read a lot of the posts and am very happy to see how helpful everyone is.  I love the pictures and plan on trying to smoke cheese one day along with every other meat.  I have lots of salmon to smoke in the meantime.  Is there anything special I should do when I first get the smoker (i.e. turn it one and let it smoke with nothing in it).  Thanks all and I hope you're all having a great day!

You should season the smoker. Welcome to the forum. Someone will come by with a link to the FAQ's. Kinda hard to do it off my phone. :D

Thanks Mike...I have been reading about his famous smoked salmon and will be trying it.

Thanks everyone else for the welcome messages.  I order a jerky gun today too!  Now I just have to find time to do everything I want to do.
I do have a question that maybe some of you seasoned pro's can answer.  Can I strip down my salmon (bones out of course) and stuff it into the jerky gun and make salmon jerky that way?  Seems feasible but better ask the pro's.
