Quick Question about tamales

I am gathering the ingredients to make some homemade smoked pull pork) tamales.   

My original question was is it better to freeze and vacpac before I steam them or after?

Now that I am here I will add a second.   

What would you think of smoking them in the husks before cooking/freezing ?

If you vac pack either way the vac will smoosh the tamale. After i make them i leave in the husk, put them on a cookie sheet and freeze. Then when frozen i vac seal this way they wont smoosh.

You can smoke them but the steam will more than likely take the smoke off the husks.

I have smoked tamales wraping them in a damp paper towel,

but that was before I got my cold smoke adaptor. (after steaming them)

Getting close to that time to make a bunch.

I guess for a first time try I will smoke the pork butt and get the smoke in that way.

Hmmm    Maybe I could smoke the MASA  :o

smoked masa ..... go for it. Give it a try. You never know! ;D

If you freeze some. Bet you could add some smoke then

as you bring them back up to eating temp.
