I hunt and fish in Crockett all the time ( family ranch). Love that place. Used to travel down 190 all the time. Been thinking about moving to Crockett actually. Very cool. Small world that is forsure.

If in my area, let me know and maybe can have lunch at Shrimp Boat Manny's.

Creosote smoke bite from having the vent closed down to far. With only a few smokes n your new unit it shouldn't have that much build up on the doors and walls. The trapped in moisture is causing it to peel off. Give it a good cleaning and reseason it all over again and you will be up and running again.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Thanks, I did that this afternoon. Scrubbed it very well and re-seasoned it. Hopefully this will fix the sour taste problem.
Thankyou to everyone and all your advice.

What i dont get is your smoker got that black in a few weeks? Even with the vent closed off the smoke backup will go into the generator and out the vents.

Took all my Bradleys a couple months to get that black?

Guess i'm looking at it a different way
