Tri Tip Tuesday..... with finish pic's

Well everyone has been doing a Tri Tip here lately so I thought.....Hmmmmmmmmmmm

My turn!!!!!



Started with a beef Tri Tip...applied a liberal amount of rub.

Next, cover with wrap and frig for a minimum of 6 hours... I like to do a overnight rest.



Using my smoke adapter as a firebox...added Kingsford charcoal...

Once hot I added Hickory wood chips.

I'll also will add one Hickory Bradley Smoker Bisquettes every 45 minutes for flavor.



I add this piece of foil -- thought here was to try and make sure the smoke/heat is not hitting the back wall/heating element.





Smoke is now rolling in.





Looks like the foil is working.



I also have a couple of Pastrami's going too.

Had to go and pull the Pastrami out...

Back to our Tuesday Tri Tip!



Pulled at 145f...



Tent for about 10-15 minutes.



Next I let the TTT rest for about another 5 minutes uncovered before...



Slicing.



Slicing across the grain - about 1/4" slices.



I see a nice little smoke ring.

Man I'm telling you the Tri Tip was so gooooood that my daughter had me vac seal her 6 slices for today's lunch.



The Tri Tip is definitely on the menu again.
