He may have started making sausage a year ago, BUT..... This is the first time he has had to turn the crank on that stuffer of his. I had to listen to him whine how his arm hurt the whole 30 minute drive home from work!!! What a WEENY!!! ;D ;D

I got some rolls that look (and taste) just like that,,,,,,,,had a big ol hunk of sausage a fresh egg and a slab of cheese on one fer breakfast this morn.

SS looks good Sonny,,,,,,,how'd the sticks turn out fer ya?

The bread is going to a friend and Son #2. I'm not bringing bread

up there when there is already two fine Bread Makers doing their thing.

I used a cup of Buttermilk for the wet ingredients on the snack sticks

and dissolved the cure in that before mixing with the spices.



My favorite part.



The summer sausage I used a cup of buttermilk and 4oz of water and two heap

spoons of red pepper flakes. Next time I'll use more pepper flakes.

Wow! Tasty lookin' sticks & SS! nice job!  :)

Thanks for the nice words. I can't remember the IT of the SS when

when they went in for a bath, but the water held at 162* and it didn't

take long for them to finish. I didn't bathe the sticks and they finished

about 1:30 this morning. The sticks have a nice Hickory flavor and I am

sure it will be as good on the SS after vac seal.

I have some of the same difficulties that you have with your shoulder ...... PLUS .......

I am physically challenged in the height department. I'm crankin' uphill while MOST

people are crankin' downhill. I think I need to find a box to stand on. ;D
