Memorial Barbecue

About 3 weeks ago one of my fly fishing buddies went to go meet his maker.  He did not have any family, so we were sort of his family.  In honor of his passing, we are doing a number of things with his stuff that we are hopeful that he is looking down and smiling on.   One of the things that got brought up is to have a BBQ in his honor.  Thought that was a good idea.  I'm gonna have definitely

Brisket
Butts
Brats
Spatchcocked Chicken
ABT's
Fatties
Smoked Catfish Dip
Buffalo chicken dip
Caney "Muffins"
Beans

Any ideas from the crowd?  Can't do ribs as they take up too much room in the smoker to feed that many people.  Would like at least another meat or two, a WOW side and possibly a WOW dessert!  Finally found me some CT - so now I can use that if you have a special dish.

What about leg of lamb roast?

Center cut pork loin cut 1 1/2 - 2" thick then stuffed.

I'm getting ready to stuff a Top Loin, but that may be too expensive to feed a large group.

Turkey boulders are allways good and spicy coleslaw to go with the goodies.

Chris, that is a great idea.  Since I haven't done the cilantro salad, it does sound like a great time to do it.

An Irish friend of mine died a couple of months ago and his colleagues (He was a bar owner) threw a great wake with terrific food, booze, and most of all, a huge crowd of old friends sharing memories and stories.  It was an honor and a joy to attend - may your day be likewise.
