Got me a couple of Cornish Hens - They'll get spatchcocked and get a new deep tan, before occupying my plate for a few minutes.   Not sure of rub and/or sauce.  I do have a bottle of CT that may finally get used though!

Thought I was going to get to go fishing, but my female taskmaster told me I was going to help her get something out of storage.

Nope, that's still at the office ---- outta sight - outta mind!

She has an idea that she wants to sell an antique chest we have had around for a while that has A. York carved into the back.  Among many other things we also deal in antiques - and I use the term deal vaguely -  We buy more than we sell!

More than a dabble - 33 years.  But have never had a shop --- yet.  Sold out of the house, the backyard shed, outta the car trunk, at the flea market, and from mall booths.  It's really my wife's doin's - but I get to help!

From Today until Tuesday:

10 lbs of Kielbasa
2 Butts
5 lbs of Snack Sticks
10 lbs of Summer Sausage
10 lbs of smoked cheese
1 or two tri-tips

I think that is all.

Going to do 5 pounds of OU812 hotdogs, 10 pounds SS, 10 pounds of snack stix.  Will be making up 20 pounds of Jalapeno & Cheddar fresh sausage some in hog casings and some in patties.


Enough ain't enough and too much is just about right.

Bacon and salt for the larder, a fattie and a tri-tip (along with some non-smoked rice and a pot of greens) for lunch for the guys rebuilding my wall.  Thanks for reminding me - time to take the bacon out to air dry before I get everything else going.
