Overnight Buttermilk Coffeecake

This is a nice recipe to prepare and clean up one day and bake the next.  I use to prepare it for the boys to wake up to on school days, for Christmas morning, or when having company.  Now it's made alot for hubby to take to work.

I don't often have fresh buttermilk in the house so I use Saco buttermilk powder 4 Tbs in the flour mixture, and use 1 c water as the liquid.

2 c AP flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
3/4 c softened margarine/butter
1/2 c granulated sugar
1/2 c brown sugar, packed
2 eggs, beaten
1 c buttermilk
1 tsp vanilla

Sift together flour, salt, soda and baking powder.  Cream margarine or butter with sugars.  Add beaten eggs and beat until fluffy.  Add flour mixture to creamed mixture alternating with buttermilk, beginning and ending with dry ingredients.  Add vanilla and blend well.  Pour in greased 13"X9" pan.

Mix topping.
1/2 c packed brown sugar
1 tsp cinnamon
1/2 tsp nutmeg

Sprinkle over batter.  Let stand, covered, in refrigerator overnight.  When ready to bake, put in preheated 350 oven for 35 minutes.

I don't beat eggs in separate dish, I just push creamed mixture aside, put in eggs, beat then combine with the creamed mixture

I'm gonna try this one.  I'm not much of a baker but it sounds like I might be able to handle this and it sounds good.

I tried the buttermilk powder and didn't care for it, though not in baking.  I usually have the real stuff for a chicken or pork marinate.

Looking forward to pics.  How about a video?

Just give me a spoon and move out of the way.

Looks good to me! I have the Seco Buttermilk powder in stock at all times. Use it for Bread, Pancakes, Biscuits and the lot. Anything I can make the night before when my brain might be a little sharper is a good thing. That would be a great compliment to a breakfast casserole cooked in a pooper.

I forgot to mention if you use a dark pan like I did lower oven temp to 325.  My brown sugar was a bit dry, if you use a fresh box the topping will sink better.  Arnie, I only use the buttermilk powder for baking, never cooking.
