Power Out Pork Loin

Just a follow up to being out of power here for another six days or so.  It's back.

We didn't starve.  Between the generator, OBS, gas grills and pellet machine we did OK.  Lasagna, torto-thingys, mostly because of Julie.

Some of you that know me may remember Julie.  She's a great Italian cook and momma.  Sonny, don't bring up the bra pics again.

So, here's the pork.  About a 3.4 pound boneless loin.  I did the butterfly, Julie stuffed (with Lord knows what).  I tied up the sucker.

Roasted at about 300 for an IT of 145-150.  Rest for 30 minutes and then about 10 minutes in a 450 oven for crisp.



Our poor stray cat, Rambo, must have caught a scent.  I feel sorry for the poor old SOB but feed and pet him best as I can.  He DOES like brisket.




All on a plate including homemade applesauce and some sort of veggies.



The flat iron steak is coming next.

Glad to hear you got the power back!  Now that is what I call a full meal deal!  That is a great looking plate of food!

A celo bag of spinach, blanched.  Not entirely sure what else but I'd guess at crumbled goat cheese and a LOT of garlic.  We had a lot of people in and out for showers and such.  Anything leftover disappeared real quick.

Glad to hear you have power back.  If that plate is a example of how you have been eating, with the outage of power, you have done well.  Beautiful plate if food, and I love the pork loin.
