sustitution question?

Can I replace nonfat dairy powder with corn syrup solids? I am trying Viper125 recipe for pepperoni and I am completley out of dairy powder. Thks Piker

Corn syrup solids have excellent binding qualities when sausage is cured at lower temps so I would say yes in some instances.

Corn syrup solids also help retain moisture, and will improve the reddish color that is developed by the cure.

It is measured differently. Corn syrup solids is generally used at a rate of 1.5 tablespoons per 10 pounds of meat. I don't use it that often, so I don't know if you can increase the amount. I know that dextrose can be used up to 5 tablespoons per 10 pounds, and corn syrup solids are less sweet than dextrose.

thks guys. I looked at the recipe and it called for 2 cups of n.f. milk powder so I assume 2 cups of c.s. solids would not work. I will have to break down and go to town and buy some milk powder. Thks again Piker
