Dehydrator Jerk+Family Recipe+JDU Approved

dont shoot the dehydrator...

this family recipe is time tested... has warmed the innerds of the hungered for decades... and more importantly its jerk diggers union local 666 approved...  

im thinking replace the liquid smoke with a few hours of hickory in the bradley... but ill need a vote of jdu union members... of course...

for approx 8lbs trimmed i use this jerk juice...

32oz worchester...
32oz soy sauce...
4 big spoons of liquid smoke...
6 big spoons of lowerys...
6 big spoons of garlic powder...
6 big spoons of onion powder...
2 big spoons of cayenne...
2 big spoons of black pepper...
4 cups of jalapeno nacho slices...

put all liquid in bowl...

put all dry spices in bowl...

slowly add liquid to spices mixing with handheld blender...

put jalapenos in separate bowl and mix with handheld  blender...

add mixed jalapenos to the bowl of liquid and mix with hand held blender...

layer soaker with layer of meat... layer of juice... meat juice meat juice... meat juice meat juice...

approx 8lbs will dehydrate to approx 5lbs... it takes 2 cooks of 6 trays each to dehydrate all 8lbs...

i take a bag to my truck and leave there in the varying summer heat until consumed... it will last many many months when refrigerated and a few weeks in the hot truck without refrigeration... always zip the bags closed after the 1st 12 to 24hrs or the jerky will pick up the taste of its environment... sometimes i use jalapeno for flavour and sometimes i use red thai chili paste for flavour... red thai chili paste would only be 2 cups for approx 8lbs because that stuff freaks me out...
