Canadian Bacon

We used Hab's recipe.

After the 7 days of curing, we rinsed them off, netted them, and put them in the smoker at 225 degrees until it hit 140.  We used hickory smoke.

After we smoked them, we brought them in.


The bacon in the middle is a little darker than the other two.  That is because I sprinkled it with chipotle powder.
We wrapped them in plastic wrap after we pulled them.  They will rest for two days.

Looks killer.  I broke down an bought a loin yesterday and it is in the freezer.  No time to cure and smoke before we head to NC for Thanksgiving.  Will be doing it when we get back.

BTW, thank you for the original Blazin' Pistachios recipe.  Jan and I tweaked it a bit for a little more heat but it is essentially your recipe.  Thank you.

Nice looking Canadian bacon. I've never tried netting before. I have some so I will give it a try next time.

I always save a little hunk to dip in egg, coat in flour, and have as an appetizer!
