Cabella meat grinder

Hello

I will be buying a Cabella meat grinder this week. I have seen people using a lot of different models. Should I buy a 1/2, 3/4, or 1 horsepower model. There is a pretty steep price curve.

Well depends on you. I have a small one on a kitchen aid mixer. It works good for grinding. I do mainly 5 to 20 lb batches. I have been given a large commercial one and will have it soon as Im done setting garage up. But either will do the job. It's just how fast you want to go. Mine is fast enough but the big one is really quick but takes a lot more to clean.

I only use pork and beef for sausage. If I had to do it over I would not buy a grinder as I no longer use it much. I'll buy a pork butt and just have the butcher at the supermarket grind it for me. And ground beef can be bought anywhere.

I went with the biggest the budget allowed—and am happy I went with it (cabela 3/4HP).
I rarely do loads bigger than 15-25lbs, so this unit does the job quite efficiently without putting excessive strain on the motor. Very powerful.
If I were a hunter or needed to process more than I currently do, I would have opted for the bigger model(s).

If you don't have a grinder, what do you use to stuff the sausage. I will probably only be using pork and beef also and I like the idea of buying from the grocer.

Buy a good stuffer. I bought my grinder with the idea of using it to grind and stuff. But using a grinder to stuff is not the optimum. So I bought a Weston 7 lb stuffer from Cabela's. Since I don't hunt, I really don't need a grinder. If doing it over, I would just buy a good stuffer (I like my Weston).

For a stuffer and mixer I use these KC (Kirby Cannon) and Mixer with great results.

I too tried the grinder to stuff and it was a bad idea!

Yes, I found stuffing with the grinder pretty easy but I was basically grinding three times which I din't like as it looked like mush. If you do have to grind with electric here is what I found worked real good. Cut your meat up in small 1/2 to 3/4 inch pieces. Then Mix cure and spices in. Sit in ridge over night to get flavor started through. Then depending on coarseness you want grind and stuff for coarser. Or grind once and stuff on second grind. This way even my kitchen aid done a good job. I did buy their biggest mixer with metal gears when I got mine. Wouldn't recommend the smaller ones with plastic gears if your grinding or stuffing. But now with batches getting bigger I am using a enterprise stuffer and grinder both commercial from a butcher shop. Craig's list sells them all the time. And they far surpass anything Cabala's ,Lem's or any of them type stores sell. And a large grinder can be bought for 250-500 dollars and last a life time. The stuffer is a 10 lb hand crank cast iron. I see them from 50-250 all the time. To me It's a  no brainer.

That's all I have ever used so maybe someone that has used several stuffers can chime in.

I have the 3/4 H.P. Cabelas and it is all I ever need, will grind up to #50-#100  at a time then put in 10# pacs back in the freezer to do when I'm ready. Never had a problem and when you do with Cabela's they stand behind it.
