Some Bambi SS

Got a late start this morning.  Mixed 14 pounds of Bambi and 6 pounds of Pork.  May change this the next batch depending on how it turns out.

Mix all mixed and ready


Casings soaking


Bambi and Poke all married  :o


Mix added and all hand mixed.  I NEED a Kirby mixer  :P


Eight chubs hanging and gona let them dry for an hour then put 2 hrs and 40 mins of Hickory to them


Be back in a while.  Got lots of butchering to do.


Enough ain't enough and too much is just about right.

Yep some non fat dry milk

Looks good sailor! I use to use soy instead of dried milk. But the neighbor still prefers soy. I can't really tell the difference and use which ever is handy. Bet that tastes excellent!

I have found that with a power mixer you get what fat you have in your mix stuck to the sides the mixing bowl.

Just sayin.  ;D

Sorry for the delay in posing results.  They have been in the fridge getting happy.  The hunter will be over this afternoon to pick them up plus some snack sticks that were made yesterday and the ground meat.  When he gets here I am sure we will cut into one for a taste test.  I have noticed that the sausage is losing moisture as the casings are getting lose.  Just following orders from the Master (NEPAS) as he said to let them rest in the fridge for 2 to 3 days.  Will post $ shot when we cut into them.

For the 20 pound mix I used 2 cups of water and 4 cups of Non Fat Dry Milk. For 5 pounds it would be 1/2 cup water and 1 cup dry milk.
