Dinner for Friends

My Wife informed me we were having six friends over for dinner and please smoke something special.  SWMBO and deserves doesn't request too often so I thought I had better get on it.  Got a two pk of pork tenderloins from Costco.  Of course Costco pks have two tenderloins in eack package-- well that should feed eight people since one tenderloin is over a #, and Iknow my wife will have side goodies, appetizers etc.

 

Here are two at the start.  I then buterflied each, and pounded each with a mallet to 1/2 - 3/4 inch thickness.

 

Seasoning: 1tbs bl pepper, 1tbs garlic salt, 1tsp smoked peprika, 1/2 tsp onion powder, 1/3 C OO -- into a bowl and mix well.  I then put a generous rub of the seasoning on the pounded tenderloins, diced 1 and 1/2 C of dried apples.  Layed the tenderloins on slices of bacon and spread the diced apples down the center of each loin.  Rolled the loins back up and tied with twine.

 

It was then into the Bradley til IT of 145* ( about 1 hr - 20 min ).  After 1 1/2 hr FTC I was told to slice she was ready to serve.

   

After the salad, this is the money shot.  The sides on the plate are sweet potatoe caserole, and spoon cornbread, and of course a nice glass of wine.  My Wife does know how to plate and serve.  The tenderloin was moist and tender with a nice touch of smoke.  The comments were great.  All in all, it was a good evening with friends.  Isn't this season great?

I usually remark how lonely it is smoking here in my area when everyone lives so far away. But there is times I realize if I could get  a chance to sample all the things that look good on here I'd probably be that 2.5 ton guy their hauling off on a truck to lose weight.

Tommy, a finish in the SRG to crisp up the bacon was my original plan,-- but,I didn't have enough shelf space for the load of tenderloin that was needed to finish all at the same time.  Yes, I need to visit the accessory store.

These are cheaper and work well.  Just don't clean them with steel wool or any type of metal brush.   :-\

Now them there tender loins look GREAT.

I like to hang them in TBE to finish and crisp the bacon a bit.
