Christmas Sticks......

Trying sticks with my new Jerky Gun....

Wished I had used 80-20 or maybe 85-15 but away here we go....



to the frig for a overnight rest...

Next Morning....


New Gun!

Here are the rounds...



And here are the flats.


To the smokers...

I put the sticks in the upper unit


In the lower unit I already have some beef jerky.


Back to the Sticks.

With the smoke rolling....



Clean up time on the gun.


It's been a bit - time to take a little look.


Done....




I wasn't real happy with the outcome of the sticks....thinking because of the 73-27 but I will be trying it again.

Ok that's done - time to move on to more items for our Christmas Baskets.

Looks good to me.  I did my first GB last weekend using 80/20 and I had a grease fest.  Next time I am using 97/3 or doing the pikeman vinegar fat extract trick.  I recon if we can eat our mistakes then all is good.  ;D


Enough ain't enough and too much is just about right.

Had the same problem...

My wife just stopped by Kroger's and picked up 90-10 for me and I will be doing more.

They just will not make the give away basket that we are doing.

Now them stix look super good, and we use 90/10 when making beef stix, not a fat problem with the 90/10...Merry Christmas
