My Holiday roast w/pics

Well I wanted to smoke this ribeye roast on Christmas day, but it was kinda hectic, and the DW had other ideas so it got done today. First picture shows the bone cut, second is after the rub (I used Cabelas steak rub cause it was pretty much all I had, I'm new at this and will make some of my own rub soon). This was about 6 AM this morn. I then put it back in the refer till noon. Roast was just under 3lbs and I smoked right at 200 deg. Smoked for 2 1/2 hours, and at about 3 1/2 hours it hit 140 IT. Took it out and covered with foil for 1/2 hour, then we coudn't stand it any longer, had to dig in! Last pic is a slice next to the garlic mashed potatoes, mmm...... :D



I'm just a social smoker, I can quit any time I want.
