new years sausage party

As the new year starts I thought it would be fun to just make a sampler sausage project.

30 pounds of Summer Sausage for my brother in law, 12 pounds of Seemore's Crawfish sausage and a variation of Poli's chicken (added some pheasant) and tomato for my dad and 60 pounds of 'meat sausage' - family Hungarian kielbasa recipe - for all of us.

Not that the recipes are different, but just doing something with my dad made the project very worthwhile and fun.



The summer sausage is High Country mix in 2 1/2 x 20 fibrous casings, smoked for 3 hours with apple and maple, then water bathed at 160F until IT hit 152F. Held for 10 minutes then into ice water until IT hit 100F then bloomed for 2 hours and vacuumed.





The crawfish and chicken sausages were fresh so we mixed, stuffed, and partially froze while waiting for the Kielbasa spices to mingle. They were vacuum packed and back to the freezer. (the rest of the chicken sausage is allready in the freezer)




The kielbasa was mixed, stuffed (with the Kirby cannon of course), dried, smoked (cottonwood and apple) for 3 hours at 160F then water bathed at 160F until IT of 152, held for 10 minutes, into ice water until 100F IT then bloomed for 2 hours, cut into 4 oz pieces vacuum packed and sent home.

That is just great. Who is that old fart working with the grinder. Your dad is going to kill me. Try not to work him to death. It sure looks like you took on a good load. Man that had to be a long day. The sausage looks great. I think your dad is right. He says I have created a monster.

I should clarify the project by saying that it was over two days ( had to take a few Geratol breaks )

Don't let that get back to the older guy.
