Hello from Ohio!

Hello! Kelly from Ohio here! I'm looking forward to being an active part of this forum...I can see that I'm going to quickly make this my new culinary addiction!

I bought the Bradley 4 rack digital smoker for my boyfriend for Christmas...(okay...so I actually bought it for both of us...) We tried it out today with fantastic results. I'm hooked. Much easier then the propane smoker we've been using, and I can't wait to try cold smoking some cheese and sausages.

I have a little bit of formal culinary training and a lifetime of kitchen experiments behind me...I'm not afraid to try some unusual combinations and 99% of the time its edible! lol I'm not much for measuring ingredients unless I'm baking or working in the shop making soaps and etc. :) So pardon me  if I post recipies in the "little bit of this and a pinch of that" style!

Other then that...I'm a busy chic! My passion is cooking, I'm a full time Office Manager for a busy holster manufacturing company, a Commander for a military police unit, and I own my own online boutique featuring natural & handmade bath & body and home fragrance items.When I'm not crisscrossing the state for all of that I'm enjoying what little free time I get with Paul and our two dogs, Fenster the boxer-pit mix and Bella our rescued golden retriever - chow mix. Being so busy I'm definately all  about big flavor in little time....but I love the satisfaction of an all day smoke or slow -roast when we get the time!

Welcome I'm also in Northeast Ohio. im from Salem so you should be pretty close. You have joined a great site with all the help and recipes you could want. But about the measuring. If you work with cures making meats I would suggest being real careful measuring amount of cure to lbs of meat. Now the other spices ok. But cure can be dangerous in large amounts. Look forward to pics we love food pics! Rule around here is no pics, didn't happen, LOL
