Large Ham

Before my sister left, she bought me this...



Which came in @  #26.25.  I was not able to smoke it durring Thanks Giving so I deboned and froze it.





I froze it for almost a month. 





Tied it up



Defrosted it in while in cute for two days and injected it 15% following the great recipe by 10.5 and let cure for another 5.

Set to dry in the Bradley and smoked for over 30+ hours.



After smoking and 4 days wrapped in the fridge

Probably one of my best. I think the extra time in the fridge wrapped did the trick.

Sam... just flat awesome, a center cut out of that bad boy, and some home fried taters and a couple of eggs over easy, just heaven.... :D
