Snack Stick/ Slim Jim

Snack Stick/ Slim Jim

Is basic difference the size of the stick? What size casing and stuffer tube is used for each? I think 3/8 is for snack stick is that correct?

I think that "slim Jim" is a generic, albeit commercialized, term for a type of snack stick on this forum. And you can make them whatever size you want (within reason of course), I think anywhere from 17mm (5/8") to 21mm (7/8") casings is the standard sizing if you are using a casing, some make a caseless stick using a jerky shooter.

In general I think that whatever size you pick and whatever spice mix you pick can be classified as a snack stick and if that is what your idea of a "slim jim" is then so be it. We all would enjoy your sharing the process because we all can learn from others successes and failures (although most of these guys don't make mistakes, which leaves us simpletons awed at the great sausages produced by them).  And of course your need to post with pictures because as Pikeman (aka Kirby) says "if you ain't got pictures you didn't do it".

As far as stuffing tubes go, you want one that will not be so tight as to restrict or stop the casing as it comes off, yet not so loose that the mix back flushes around the end and squirts out the back of the casing.

I use a 3/8 tube for all my sticks, from 17mm to 22mm

And yes if you like bigger sticks larger than 22mm then yeah it a slim jim, or snack stick.

I am getting ready for a first attempt in an oven. No smoker yet and a very small harvest maid dehydrator. These guys make it look so simple and it is alot for this pea brain to consume ;)
