Hey yall - I have two separate turkey breasts to do, and I was thinking I would half a whole turkey to fill up the other two racks.  Is that too much? It probably is - I will need to leave a rack or two out for the turkey breasts anyway - no room for the whole/half bird anyway.

So....I guess that was it....

No not to much IMO but will take longer.  probably just use 3 hours of smoke so it dosen't get to smokey.  HTH.
