CitiCorp OneStop BBQ......

My daughter, who works at CitiCorp, call Sunday and asked me if I would cater BBQ for her floor.

How many people I asked..............................33 she answered.

So, I started with two big butts from Restaurant Depot - 20.73lbs in total.

Seasoned and rested in the frig overnight.



Monday morning I fired up the Backwoods and the Bradley.
Note: I've entered my first solo competition in Benton, KY on March 30-31 2012. Need some practice on the Backwoods.



I placed one butt in the Backwoods and the other in the Bradley.
After 1-1/2 hours I placed a Brisket, that I had prepared at the same time I did the butts, into the Backwoods.

About 4 hours later......

Notice the nice color on the shoulder already.....I'm thinking this will have a nice smoke ring on it.

The butt in the Bradley IT just hit 195F.... time to FTC.


I place the foil wrapped butt into a pizza bag.


I placed a towel inside a cooler and then rested the first butt.

Time to pull the Brisket after reaching 187f......time to FTC.

I repeated the above steps.

Now I have a Brisket and the first butt in the cooler.

Two hours later the second butt was ready. I repeated the FTC.

Later that morning my daughter showed up to collect the feast.

As I worked on the smoked goodies - she loaded her car with buns, 8lbs of beans and a gallon of coleslaw.


I pulled the butt that came out of the smokers first.......the Bradley butt. Note the niiiice color.




Well.....I had to try it out.

This one is for Larry!

But i prefer mine with slaw.....



Hmmmmmmmmm......

She asked me to start the Brisket so that she would know which way to slice.





Now - off to work you go!

What comp is going on in Benton on 3/30-3/31?  About 30-40 minutes away from Paducah. :)

I did the one just for you ;D..........but I had to pile the slaw on it for me  :o

Great Job.  Your backwoods smoker sure make a nice smoke ring.  I know it doesnt add to the flavor but dang they look purty....  I wish electrics could make 'em.
Is it bad if my wife refers to the smoker as "The Mistress"?

Great looking cook.  Your Daughter is going to be very popular if she isn't already.  I sure wish I could try one of those similar to the one you fixed for Larry. ;D

Hmmmmmmmmmmmm..... Well, yes I too wish that I had will power.

Me?  Nah, not qualified.  It is a KCBS sanctioned event.  Would like to become a KCBS sanctioned judge though.  May look into that.
