Roasted rum tangerines with ginger crumbs.

Only found this around Christmas and already done it several times....! It is particularly nice after a "heavy" main course!

Serves 4, preparation time: 10 mins. Cook time: 15 mins.

Ingredients:

25g/1oz butter.
8 tangerines, peeled and left whole.
1tsp icing sugar plus extra to dust.
Dark rum, "splash" to taste.
About 50g/2oz Jamaican ginger cake, crumbled.
6 tbsp ready made toffee sauce. (e.g supernarket squeezy bottle)
4 tbsp creme freche, to serve.

Method:

1. Heat oven to 180C/360F (fan oven) or gas mark 6. Melt the butter in a small heavy based roasting pan. Add the tangerines, tossing to coat, then sieve over the icing sugar in a thin even layer. Splash rum over the tangerines to taste. Roast for 10 minutes until hot and lightly caramelised. Toss the tangerines in the juices.

2. Sprinkle ginger crumbs over the fruit, then retun to oven for 2-3 minutes until crisp. Put the tangerines and crumbs on serving plates
then heat the toffee sauce in the same pan then drizzle over the fruit.Serve with a spoonful of creme freche.

Alternative: use slices of fresh pineapple.
