Got some flank jerky going for a guy at my wifes work.

Trim it some. Got 2 slabs this size



In the slicer.



He wanted hot. I was just bout to mix the ghost when my wife called and said hotter....WHAT



Ok Hot huh. Then he getting a double tooth pick dip of some 2 am.



Into the Reveo. Its so hot its smoking.

So for those of us that don't know, what's in the bottle? Ghost pepper extract?

Blairs 2 am is 900.000 scoville unit hot pepper oil. 1 tooth pick dip heats 10 gallons of chili

Man that's gonna be some flaming hot azz jerky. Does the 2 a.m. come from the fact that you'll be hitting the Krappa at that time. :D

Here the flank in the 6 rack. 1 hr 20 of smoke then into the dehydrator to finish @ 145



This morning i took from dehydrator , cut into smaller lengths.



Lets see if he likes his jerky hot now.....HAHA

When my wife got home and settled she came into my cubby /sausage hangout and patted me on the back. Said i dont want you tp break your arm for doing a nice jerky for Kevin.

WTH!  That guy MUST have a hellofva high tolerance for HEAT pain. You got anything hotter than that. I bet ya weren't expecting that answer from the wife.
