To Cure or Not to Cure?

Smokin Sparky

  I am planning to make 5 lbs. of Ground Beef Jerky.  I have a package of Smokehouse Teriyaki Dry Rub & Mix.  I was wondering if I need to add cure with this mix also.  I plan on smoking and then finishing in a dehydrator.  I never used a package mix before so any help would be greatly appreciated.   :) :) :)

As Mike has all ready stated YES cure with ground beef.

Doesn't this mix already have a cure package included??  If so, don't add more cure.  Just follow the directions.

  I don't know if there is any cure in the mix.  The ingredients listed are:

Sugar
Soy Sauce Powder (Wheat, Soybeans,Salt)
Maltodextrin
Salt
Hydrolyzed Soy Protein
Onion Powder
Garlic Powder
Spices
Spice Extractives
BHA (.16%)
BHT (.16%)
and not more than 2% Vegetable Oil and Silicon Dioxide added as a processing aid.

Cure BHA is a preservative and anti toxin.

From my experience, and limited at that :). If it has cure, it will be in a separate small package inside.

Just looked at one of my LEM jerky packages. It says, WITH CURE.

From what I read on their website, all their jerky seasonings have cure in it. Just add to the meat and smoke.

I would shoot them an email. I don't see any cure. Usually BHA and BHT are adding to preserve or lengthen the self life of the ingredients. The spice extractive could be celery juice powder, but that is a guess.
