Fantastic Beef Sticks

Must have been fan week I see quite a few did the mod.
Ordered this one from Smoke and Stuff it came complete with fan housing 
It was an easy install to do with the instruction and template that came with it.





Time for the sticks (another 6 pounds of Gregg's spicy ones
All the ingredients mixed up (hand blender does a great job)


Starting to stuff in collagen casings
I always give the outside of the collagen casing a quick soak with water makes them
A lot easier to handle and you can put a lot more on stuffing tube



6 pounds stuffed and tied...  have to work on the lengths abit



Here they are in the smoker
I'm not going to switch the racks around on this smoke
I want to see what kind of a difference the fan makes between the top and bottom rack.




Will let you know how I make out with these.

Yep there done... bottom rack of sticks finished in 5 hrs
top rack took another 45 Min's......There all vac packed now..
I had some pictures to post but my puter went for a S@#$ so on the lap top now. :(

I hung my sticks last weekend and did the same as you. I didn't rotate the sticks because I wanted to see how the fan mod worked. I was happy with the results although with the 900w element I put in, some of the sticks at the back wall were scorched at the bottom. Next time I will rotate.

I'm just running the 500 watt element and the fan seemed to even the heat out between top and bottom racks
but I'm still going to have to turn the racks front to back
sticks at the back of smoker hit IT of 160* by the time the sticks in the front hit 152* on the same rack.
The fan mod did speed the cook time up considerably.

I agree with you, the fan mod is an excellent addition. I had the same results with temps between top and bottom, I also did 7.75lbs of sticks in 4 hours. I was shocked. Like I mentioned though, the sticks in the lower back were alot higher in temp. It was my first run with the new set up and I'm pleased.
