Snack Sticks

I'm making some snack sticks tomorrow using 17mm edible collagen casings.  Does anyone finish these in a waterbath after applying smoke?  I've done that with some larger casings but wasn't sure on the smaller diameter.  Thanks in advance.
There's room for all of God's critters right next to the mashed taters and gravy!

Good question, I have never seen anyone do Snack stix in a water bath, just keilbasas and bigger. I'm sure it could be done.

my opinion on snack sticks
if you start them in the smoker finish them in the smoker
not worth the hassle to water bath them

I totally agree but I just wanted to try it. It worked fine but probably won't do it again unless I run out of time and need to speed things up a bit.

as the saying goes...... each to his own

any way you do a snack stick and it comes out good is the right way :) :)


there is no right or wrong as far as I'm concerned... a good stick is still as good stick
no matter if you smoke it or bath it.....

I have thee them in the water bath. They come out plump and don't give you the dried up  look but tastes the same. IT also only takes about 15 minutes in the water. I usually smoke preheat for 1 hour and smoke for 2 so I can usually get them done in about 4 hours easily.

If time is critical, I'd use the poacher/water bath.
If time isn't an issue, I like to finish sticks in the smoker.

For MOST other links & chubs, I go the water-bath route.

I ended up doing these entirely in the smoker.  I had done some larger chubs in the water bath and was just curious.  Thanks for all the input.

I prefer them dried even to the point of putting into dehydrator after smoking. I would think the water bath would be more like a sausage stick.
