I just ordered a Bradley Smoker.  I've been reading the book Charcuterie and am very excited about my new hobby.  I live in the country and grow my own hogs, sheep, goats and chickens.  My husband has done a lot of hot smoiking, but I want to venture in to cold smoking and various gourmet meats.  I'm so excited about this.  I bought him a bunch of books last year but seems I'm the one more interested.

Welcome to the forum Ggirl1959. You will pick up a lot of tips here. If you don't have it already, another must have book is "Great Sausage Recipes and Meat Curing" by Rytek Kutas. I envy you being able to grow your own livestock!
