Substitute cure?

Can you substitute one of the Bradley cures (honey, maple) for Prague #1?

No! Not as a substitute. The Bradley cures are a cure mix, sodium nitrite, additional salts, sugar and other seasoning that will bring the percentage of sodium nitrite down to around 1%. It is a cure you can use right out of the box, and not have to add any thing else.

Prague powder #1 (cure #1) has a sodium nitrite concentration of 6.25%. So you will need to apply them differently. Also this cure requires additional salt, sugars, and if you want other seasonings.

Habs, thanks for the clear answer, and for providing the link.  I knew I had seen that somewhere and searched this site for it, never thinking to go over to the Old's Place site to look for it.  Doh!  I'm waiting for my Prague's to arrive via mail as I cannot seem to find it locally (but JUST thought of another place to go look!) but do have a good supply of the Bradley's on hand.

If you have a Gander Mt, or Cabela's near by they often caring it in small supplies. Look for InstaCure, or Cure #1.
