I picked up my Easter ham from the butcher today, a 24 pound "leg-o-pig".  I'm going to cure it using Hab's recipe.  I wanted to hang it in my smoker but the butcher didn't have any netting or mesh big enough.  Does anyone have a suggestion as to what I might use to wrap this with?  I'm going to put a dowel rod on top of the smoker and then run some twine through the damper.  I just need to know what I could wrap the ham in.  I thought about using some cheese cloth but I don't think it's strong enough.  Any thoughts?  Thanks!

Mike, you were actually reading my mind.  I was going to go to Wal Mart and buy a basketball net.  I could close up the bottom and then lace some cord thru the top, pass it through the damper and then anchor on a dowel.

Lol. That was meant as a joke. Guess it could work.

There is a recipe on the recipe site for T-Shirt ham but I don't think it was hung in it.  Maybe you can rig that up.  Here is the link http://www.susanminor.org/forums/showthread.php?53-T-Shirt-Double-Smoked-Ham

I seriously went out and bought one.  I paid $1.50 and I really think it will work!  When I'm finished, I can either throw it in the washer or throw it in the trash.

Thanks!  I'll do that.  I'm going to give my basketball net a shot and see how it works.

A new recipe - Slam Dunk Ham!

... and how did ham get to be such an Easter staple, anyway?  I'm guessing that most of the people Jesus hung out with never ate it (except, maybe, them nasty Romans).

I'm getting ready to trim, inject and brine.  This is what it looked like in the beginning.  It weighed in at 24.1 pounds before trimming.  Once I trimmed it, it weighed just about 20 pounds.  It's now resting comfortably in the brining bucket.  I'll smoke it this Sunday and then it's back in the refrigerator until Sunday.
