Newbie ....

Old Frenchie

Hi everyone ... As my username implies, I'm a retired old Frenchman. I have a small personal vineyard and have been making my own wine for many years. I also brew my own beer from scratch. I'm relatively new at smoking meat but can do okay with Boston Butts for pulled pork, chicken, and ribs.

Now, I'm wanting to get started making smoked sausages. Although I've made fresh breakfast and sweet italian bulk sausage I've never put anything into casings and I've never smoked sausages.

I've been reading posts in the sausage section and am looking forward to learning a lot more but at this point I have to admit I'm still very confused about all the casing types.

Welcome OF! Where do you hail from? I have been known to consume the proceeds of a vineyard. I am also a homebrewer and BJCP judge, make sausage, smoke salmon(duh!) etc. This is a great forum filled with knowledgeable friendly people.

Hey Frenchie since you're in the neighborhood you should join us for the Midwest Smoke Out III (July 28th), last year was a blast and I'm sure this year will be even better.
