Bacon Laced stuffed pork roll!

Got my ribs down and ate. so now working on my lil' pork roll. Sliced that 4 lb loin to 1/2 inch thick. Sprinkled well with Jans Rub. Wife took over the stuffing and made her home made Turkey stuffing we only get once a year. Really layered in on thick. It has all the goodies. Onions,garlic,she added peppers and other things I'm not sure about. But her's is always good so I let her go. Then we covered in a blend of Swiss and American Cheese. Tried to roll this monstrosity up as well as we could. 2 lbs of Bacon ended up covering it. Not quite enough to do the bottom. Sprinkle well with Jan's again and set in refrigerator for tomorrow morning.  Will post pics as they come.

Loin cut and pounded to even out a little.



Then The wife added the her stuffing while i ran out back a minute.



Then she added the swiss / american cheese blend.



The whole time I keep  saying I have to get that thing rolled up yet! So I did and got this.





So after adding two lbs of bacon this is what i ended up The Bacon roll monstrosity.







Well I would have like thinner bacon the weave would have looked better. And there is an awful lot of stuffing and cheese. But the wife was happy so in the fridge and will start it tomorrow. You know one thing for sure! If it dont come out good I'll eat the evidence. LOL

Jeez!!  You sure are busy today. This is like the 3rd or 4th thread you put up. I bet that camera has smoke coming off it ;D. All looks good. Thanks for all the pics.

Viper, looks great.  Think your are right about the stuffing - can never have too much.  Looking forward to the money shot!

Well the pork roll came out great and juicy as i wanted. I hate dry stuffing and the cheese and stuffing blended and made it nice and creamy. The Loin was also nice and moist. We normally never like loin except for bacon as it is a low fat and dry piece of meat. But really great this way. And both me and my wife enjoyed this. And as always the Bacon well it's Bacon , always sends the taste buds over the top. I have a few pics. But been a long day with a lot of work getting done while smoking this. So will post soon as I can.

Slicing was kinda difficult because the stuffing was so moist and kept trying to come out. So I sliced it thick.





My plate! Of coarse this is showing a small amount I was trying to watch how much I ate. But ended up with a second serving! LOL





Really turned out great. And it was simple. but may try different fillings to. Not sure as i really enjoyed this.
