When I woke this morn I had a big time cravin for some eggs Benedict so I dug up what I had on hand and went to town cookin up some goodness.

First some home grown eggs.

Home grown back bacon

A pack of McCormick Hollandaise sauce mix, didnt have the things to make the real stuff.  ::)

Got a pot of water a boiling then turned down to a light simmer and spooned in the eggs, one at a time and let simmer 13 min.

Wile the eggs were gettin poached I fired up the fryer and cooked up some hash brown patties, didnt have any English muffins.  ::)

Time to build a big pile of goodness.

And finish off with a dash of Hungary Half Sharp Paprika

Oh Ya!!!

A 13 min egg,,,,,,,,cooked perfect!

Now that there was some gooood stuff!  ;D

I have never ate one my self. Grew up hearing they were these awful undone poached eggs. But 11 -12 minutes sounds more like a soft boiled egg with out the shell. So now I think I will try one. By the way is that a cheese sause?

Looks yummy, a great way to start the day, viper it isn't a cheese sauce, typically it's made with egg yolks & butter some lemon juice and cayenne pepper or some other spice of your choice if you wish.

Gotta comment when I see something that I'd try...looks great Curt.  I've never actually tried Hollendaise sauce, but at one time did purchase a packet, just never got around to making it to put on anything.

I LOVE Benedict. That looks like some good eats.
