Well no one can accuse of me of being fast !! Although to my defense photo bucket gave me fits trying to upload the pics. So with that being said... I must THANK Curt for that awesome brine recipe !!! I used it yesterday again for some wild turkey for a friend and some turkey roast donated by my mom and both turned out great again. OK picture time

In the bucket waiting to go swimming

brine added and he looks mighty happy if he had a head.

weight to keep him down

3 hours of apple smoke and getting ready to put the foil on him

all wrapped up and going back into the smoker till IT 160*

5 hours later and a 20 minute rest, money shot 1

money shot 2

I wasn't a big fan of wild turkey as it normally so dry you choke before taking a bite !! This turkey was so juicy I couldn't believe it. Will definitely be doing more turkey both tame and wild with this recipe. Thanks again Curt and sorry the pics took so long to post.

Hell Yaaaa!

That bird looks GREAT

The foil trick really helps keep the bird moist when its skinless dont it?

Glad ya like the brine recipe, it goes perfect with wild turkey I think.

Did ya save the juices from the foil?

Makes for some kick ass stock to make gravy with.
