50 Lbs Of Venison

A local friend of mine just dropped off 50 lbs of venison. Asked if i could make some sticks for him to take fishing. Would like 15 Black Forest and 15 Nacho/Jalapeno Pizza. Rest i get to keep (might not be much) but it will be ground.

Here is 25 lbs. Other 25 is in the freezer. Going to grind this week and get with it.

Wish my stingie neighbor would offer me that deal, course he did offer to pay me to make him beef jerky, He'll get a pound for free in hopes that next deer yields some jerky meat ;)

Uh, ghost9mm - so far NePaSmoker hasn't shown us anything but 25 pounds of frozen venison.  I'm not going to be impressed until he shows us 100 pounds of completed sausage.  But when he finally shows it to us, I'm sure I'll be impressed.

Suppose you need some of them casings with the little deer head on them? I have some of the brown ones, would have to go get the clear. Unless you want some clear 1 1/2 inch clear fiberous. I have a pack of them again. (Momma found them 30 seconds after she walked in the door! :o :o)

I'm looking forward to this, Rick.

I just so happen to have received a BIG load of frozen venison from a congregant (I gave her several pounds of lebanon bologna a few weeks ago), and now I have to decide what to do with it.

I'm thinking summer sausage first....& maybe sticks.
I haven't tried venison in 20+ years. My sons have never had it.
It's 25lbs of frozen colorado venison steaks & ground.  :o :o

Make sure you make something that she will like. It is good for the word to get out that you make good sausage on shares. I have done this a lot. The deal I worked out is I would by an equal amount of pork and they provided the wild meat. We then split the cost of the spices, casings, and cures. They then would often join me on the grinding and stuffing and in some cases the smoking. They all thought it was a fair deal. I figure I paid less for the pork then the average hunter spends on his hunting. Just make sure that you have them weigh the meat before you make the deal. More often then not they over estimate the actual weight of their meat. At times I would work out the deal with a couple of guys at a time and that is why I often do very large batches. Our largest batch was 539# in one Saturday. Rick has made many batches on shares.

Hi Kirby. This load of meat was really a gift and I don't think she's expecting anything in return. That doesnt mean I won't provide her with a generous amount of whatever I wind up making, but I mean to say there's no expectation.

I don't know many hunters in this area so its a rarity to have access to game.

Also, I found in the big bag the following:
15 lbs frozen venison steaks & strips
5lbs frozen ground venison
5lbs frozen ground Elk.  :o

Gonna try & make some smoked SS later today.

I understand she expects nothing in return. Around here in our church I know the hunters that we have very well and I also know the guys that have been successfully and those that are not. It is so expensive to have sausage at the commercial shops and they mix everybody's meat together before they make sausage that most do not want to bring it to them. I have quite a few guys that want me to make sausage but I am kind of busy doing my own. In lean years I take them up on the offers.
