FRIED POTATO GERMAN FRANKFURTER SCRAMBLE

This is with out my favorite breakfast. Tim Tim's post of the fried potato question reminded me of this so I made it this morning. First the cooked verses raw fried to each their own. My first rule is to smell the potato and see if it smells like storage. If so don't buy them. If you steam a stinky potato it will keep that smell. I just buy fresh potatoes if I can. I steamed these red potatoes for 30 minutes the a 10 minute rest and then another 15 minutes. They then sat over night and are perfect. Not split or mushy but nice and leathery and firm.

Now to fry in olive oil until the edges are all crisp. I love the onions with this but they are rough on me so I let them go.


After they are fried well with the edges crisp and brown.

now some diced up German sausage.


now in go the sausage to cook for a few minutes.


Then in goes about 8 well beaten eggs to finish the scramble.



then a good dusting of your favorite seasoned salt and pepper.



Now for some fresh toast with raspberry jam and a cup of coffee along with your favorite hot sauce.


the sausage adds a great taste to this blend and it is a good filling meal. I still have enough left over for a couple of more breakfast.

Now I really regret forgetting to pick up eggs when I was at the store today. That will be my next breakfast for sure.

Oh !!! heck yeh...and yes ...the only way to fry potatoes is in a cast iron frying pan...nice job...

The only way they would taste even better is if they were fried in bacon grease. Just like my mom used to do it. Not much bacon in this house. My wife is kind of a health nut.

You always have to keep a jar of good clean Bacon grease in the fridge.Nothing better to fry onions or potatoes in. You have to hid it in the back and only bring it out when needed{ie wife gone}
