Well whats everybody cooking for monday? We have 50 or more coming over for a cook out. Smoking Hamburgers, hot dogs, cooking a couple chickens in the Big easy and Pasta salad, potato salad, macaroni salad,Backed smoked sausage and beans,Mac and cheese, a good selection of smoked meats and cheeses. Thats my share and the rest are bring things also. LOL Should be some cook out. Hope every one has a great time. And lets not forget to take a few moments for those with us and those not who risked and gave their lifes for us. Praying everybody has a safe weekend!

Viper,
Ribs tomorrow, turkey boulder on Monday and 28 lbs of pork butt later in the week.

D@mn, ain't this fun?!

SWMBO's out of town so it looks like I'll be having about two pounds each of rib steak, oxtails in gravy, and chicken thighs with Jan's rub and an as yet undetermined (but considerable) volume of Abelour 'abunadh before she comes home on Tuesday.  Oh yeah, I plan on throwing some parsley in the oxtails so I'll get my greens (you can't say I'm not a health-conscious cook).

Depending on the cooking sequence (how much Scotch I have before I pick up the camera), I'll try to post a few photos.

And even if I forget everything else, you can be sure that on Monday I'll raise my glass to toast "absent friends."  All of y'all should damn well do likewise.

I have been toasting them all weekend! God bless them all.

I also started early on the menu.

Cheap, quick, and tasty.

Decided to cook hamburgers and hot dogs in smoker again. So many commented on the flavor of the smoke last time. Said it was like camp fire food. Cant remember for sure what temps I used. But think this time before smoking I'll throw on grill with it on high and brown them the way I like. Then throw in the smoker and smoke at 225 degrees till reach 160 degrees and drop temp to 140-160 degrees to hold them with a full clean water bowl.

So any great tips for smoking burgers and hot dogs or is this the way every one else does?

Not a holiday for us here in Canada(we had ours last weekend)but your menus sure sound good! Enjoy your day my 'Merican friends.

Habanero Smoker

I agree with T2; your menu sounds good. After this weekend I'm going to just chill.

Don't forget wherever you are; you should at least pause for a moment of silence at 12:01 PM (your local time). Better yet, spend some time with a Vet.
