This is my last 5 lbs of venison, dont know when or if i will get more.

What to make  :o

Ok SS it is.

Super duper secret receipt SS mix  :o



Cure mixed with 1/4 cup distilled water and the dry with 1 cup distilled.



Stuffin time.





Double chub chubs and a cloth bag.



Prob going to take most the day and into the night.

If we can get together one of these days, I have some more elk meat for you.  I am planning on goling to get another cow elk in New Mexico this December. 

I understand T may be visiting you soon.  If he does, and I can't make the trip with him, I'll try to send some your way.

This goes in the file of bad casings.

I knew from how solid the SS still was in the casings that something wasnt right.




Peeling the casings i knew it. The casings were to old even after a soaking of an hour  :'(



These went right from the cutting board to the trash  >:(



Now the cloth bag turned out great.







Oh well 1 is better than none  :-\

Going to paper bag the 1 and relax it in the fridge for a couple days.

Casings very dry even after soaking. Made the meat stick to the casing.....see the pic  :o

Aww but throw it out????? May not as be as pretty,but the taste would have been great. Eat on sandwhiches you wouldnt know the difference. I believe in eating my mistakes. LOL
