Beef Time

Took a corned beef out of freezer to thaw the other day to make pastrami. Seasoned it with Habs pastrami rub and let set wrapped overnight.  Couldn't see that little piece of meat smoke all by it's lonesome so while I was out this morning I picked up a tri tip.  Seasoned with S&P, garlic, paprika and cayenne.





Rolling 2 hrs oak, 1 hr pecan


Took the tri tip out a 140* wrapped in foil (approx 2hrs)


Took the corned beef out at 150*(just over 3 hrs) wrapped for over night and will steam tomorrow.(no pic)

Having family in Solvang, CA (next to Santa Maria, home of tri-tip) I despaired ever seeing it where I am, but lo-and-behold last weekend at Costco they had some they just trimmed!  Going to have it Saturday!!  Can't wait!  So call/try Costco and see if they have them regularly or can just cut some for you.  Worth the asking!  JUst remember to cut against the grain, which is not how you would think to cut it .. (i.e. you need to cut it in 1/2 and then turn 90 degrees and THEN slice) ...

That sliced Tri Tip looks GREAT!

I love a big ole Tri Tip sammie with some grilled onions, green peppers and shrooms.

Pastrami steamed yesterday sliced today. None eaten as a meal(just tested ;D) all vac packed for son to take home with him today.



I agree with you  sjmcdowall you need to cut the tri tip at the elbow to get against the grain.  We usually eat it mostly for sandwiches that's why it's always sliced thin.
