Ribs for a crowd-Help

I've been lurking here for a few months, absorbing a lot of good info. This is my first post.
I have been elected to smoke ribs for a retirement lunch next Tuesday. It has morphed from eight people to 38!
I have four packages of St. Louis style ribs to smoke from Costco.
My question(s): I have a OBS that has not been hot rodded (all Stock) Will it handle ribs on racks that are stacked? (I have 8 racks and would invert 4), or just smoke on whatever I can fit on the 4 normal racks? My worry is getting the smoker to temp. The temp here has cooled and should be in the mid 70's when this happens, with some wind although I have the OBS protected on the porch. Also can I smoke Sunday (& probably Monday) refrigerate until Tuesday then warm on a BBQ in alum foil. Should I wait to sauce them when I warm them or when I finish in the OBS?

I'm also doing ABT's. Will they warm ok on the BBQ in foil, or am I looking to get everybody sick!

I would do them a day or so before. Normally I use the 3-2-1 method with ribs.
If spare ribs I do 3 hrs at 225 with smoke; remove and double foil for 2 hrs; remove from foil and cook for an hour or less (until tender)
I do the same for baby backs, except the last hour usually ends up shorter.
When I do the foil I use a method that Sparky posted. Drizzle the ribs with honey, sprinkle with brown sugar and add a tablespoon of butter. Double foil and put in meat side down. after the two hours, unwrap carefully as there will be hot liquid in the foil. Sprinkle the liquid on the ribs and put in for the final hour.

In your case I would do the ribs a day or so ahead, leaving off the last hour. Save the drippings in the foil. When ready to serve, I would put the ribs in a pre-heated grill (indirect heat at 225- 250) and mop the ribs with the liquid from the foil. Cook for about an hour or until tender.

If you're smoking ribs for a large crowd you might need to think outside the box.

I agree, start early to make sure you get them done.

I probably would not put all the ribs in at the same time. I have done 12 racks before and it took me so long I took them out and put them in the oven to finish. If you do a day early you could always reheat like others have said.
