Hello all,
I decided to get out my fatty tube and try something new. Golumpkis. I started by stuffing my tube with the fillling and freezing it on Saturday. Then on Sunday I pulled it out and extracted the frozen log. I pulled 6 leaves off a head of cabbage and partially boiled them just to make them pliable and laid them on a bacon weave, put on the log, wrapped and into The Big Easy. When it was done I sliced, put some of my tomato sauce on it that has been simmering all day, a little shredded parmesan,  added some sauted mushrooms and some steamed broccoli and pigged out. This fatty will not have any leftovers, it got wiped out for lunch. It is one that I will definately do again.

It's rice, bacon (crisp fried and chopped up small), diced onion, hamburger, diced green pepper, and tomato sauce and some shredded cheddar cheese.

Yup, I grew up on the east coast in an area with a mix of european folks ... lots of good golumpkis.  Brings back childhood memories   :P

Got to make some this weekend ... maybe without the bacon though  :(

Nice job !! Bet the taste was outstanding!! :P

Try using italian sausage in lieu of hamburger, comes out great

Interesting dish but I'm not sure it is related to Polish gołąbki.

I have never tried it that way. It does sound good and I will be trying it the next time I make them.

Hello Ray,
It is an Acrylic 2" tube I cut to use for this type of thing. I ordered it from McMaster Carr on line. I decided on acrylic since it is so smooth inside and would be easier to extract what's inside. I though about pvc but if you look it is kinda lumpy and might not give up the frozen log as well. I have also done shrimp with pureed onions and garlic, covered the end of course, froze, extracted, wrapped in bacon and had a shrimp fatty. I don't think I posted that one on this forum but can send you pictures of it if you would like. Anyway I also made an extraction plunger but I don't think I really need it. I run warm water of the tube until the contents slides out with a little push. The contents usually bulges out the end just a bit so you can push down on a cutting board with the tube and get it to sliding fairly easily. With a tube like this my plan is to do all kinds of fattys that would otherwise be almost impossible to roll up nicely.
Have a great day,
